Tomato Sauce with Heavy Cream

Ingredients
  

Main Ingredients
  • 1/3 cup butter 75 g
  • 3 tbsp onion chopped very fine (45 ml)
  • 3 tbsp carrot chopped very fine (45 ml)
  • 3 tbsp celery chopped very fine (45 ml)
  • 2 1/2 pounds fresh ripe tomatoes, prepared by the food mill method (1,135 g)
  • Salt
  • 1/2 cup heavy whipping cream 120 ml
  • 1 to 1 1/2 pounds pasta 455 to 680 g
  • Freshly grated Parmigiano-Reggiano cheese for the table

Method
 

  1. Put all the ingredients except the heavy cream into a saucepan. Cook uncovered at the merest simmer for 45 minutes, stirring from time to time with a wooden spoon.
  2. Adjust the heat so the simmer becomes a bit more active. Add the heavy cream, stir thoroughly, and cook for about 1 minute, stirring continuously. Taste and correct for salt.
