Tomato Sauce with Onion and Butter

Ingredients
  

Main Ingredients
  • 2 pounds fresh ripe tomatoes, prepared (905 g)
  • 5 tbsp butter 70 g
  • 1 medium onion peeled and cut in half
  • Salt
  • 1 to 1 1/2 pounds pasta 455 to 680 g
  • Freshly grated Parmigiano-Reggiano cheese for the table

Method
 

  1. Put the prepared tomatoes in a saucepan with the butter, the onion halves, and salt.
  2. Simmer uncovered at a very slow, steady simmer for 45 minutes, until the fat floats free from the tomato. Stir from time to time, pressing down on larger pieces of tomato with the back of a wooden spoon.
  3. Taste and correct for salt. Discard the onion before using the sauce with pasta.
