A large veal slice rolled with a savory filling of spinach, prosciutto, and onion, then braised in white wine. Slices reveal a beautiful green spiral.

Ingredients
  

Main Ingredients
  • 1 1/2 pounds fresh spinach
  • 3 tablespoons butter
  • 2 tablespoons vegetable oil
  • 2 tablespoons onion chopped very fine
  • 1/4 pound prosciutto OR pancetta chopped very fine
  • A 1-pound slice of veal (top round), pounded flat
  • 1/2 cup dry white wine
  • 1/3 cup heavy whipping cream
  • Salt & Black pepper

Method
 

Instructions
  1. Cook spinach, squeeze very dry, chop fine.
  2. Sauté onion and prosciutto in 1 tbsp butter/oil. Add spinach, cook briefly.
  3. Spread mixture on veal slice. Roll with grain. Tie securely.
  4. Brown roll in remaining butter/oil.
  5. Add wine, reduce slightly. Cover and simmer 1.5 hours.
  6. Uncover, add cream, reduce to sauce.
  7. Slice and serve with sauce.
