- Cook spinach, squeeze very dry, chop fine.
- Sauté onion and prosciutto in 1 tbsp butter/oil. Add spinach, cook briefly.
- Spread mixture on veal slice. Roll with grain. Tie securely.
- Brown roll in remaining butter/oil.
- Add wine, reduce slightly. Cover and simmer 1.5 hours.
- Uncover, add cream, reduce to sauce.
- Slice and serve with sauce.
