- Brown dredged veal. Remove. Sauté onion/garlic.
- Add wine, meat, tomatoes, aromatics (rosemary, sage, parsley, salt, pepper).
- Simmer covered 1 hour 15 mins.
- Separately sauté mushrooms in butter/oil until liquid evaporates.
- Add mushrooms to stew. Cook 30 mins more.
- Serve.
