Equipment

  • Skillet

Ingredients

  • 1 cup Original Bisquick mix
  • ½ cup milk
  • 3 eggs
  • 2 tablespoons maple-flavored syrup
  • 4 fully cooked pork sausage patties
  • 1 tablespoon milk
  • 1 teaspoon butter
  • 4 slices (⅔ oz each) process American cheese

Instructions

  1. 1Warm a griddle or skillet over medium heat, or set an electric griddle to 375°F. Lightly coat the surface with vegetable oil or cooking spray. A properly preheated surface prevents the pancakes from sticking.
  2. 2Combine the baking mix, 1/2 cup of milk, 1 egg, and the maple syrup in a small bowl. Stir the mixture until just blended. Don't overmix, or the pancakes will turn out tough.
  3. 3Pour 2 tablespoons of batter per pancake onto the hot griddle to make 8 pancakes total. Cook until the edges appear dry, then flip and cook until the bottoms are golden brown.
  4. 4Warm the sausage patties according to package instructions. In a small bowl, whisk the remaining 2 eggs and 1 tablespoon of milk. Melt the butter in an 8-inch nonstick skillet over medium heat.
  5. 5Pour the beaten eggs into the skillet and cook, stirring occasionally, until they're fully set.
  6. 6Assemble the sandwiches by placing a sausage patty on one pancake. Top with a quarter of the scrambled eggs, a slice of cheese, and a second pancake.

Notes

  • Make ahead: You can cook the pancakes and sausage patties in advance, storing them in the fridge for up to 3 days. Reheat in the toaster or microwave before assembling.
  • Swap: Substitute bacon or a plant-based sausage patty if you prefer.
  • Tip: For a spicier kick, add a dash of hot sauce or a slice of pepper jack cheese instead of American.
