Ingredients

  • 3 cups cubed sweet potatoes
  • 1 cup diced celery
  • ½ cup diced fresh chives
  • 1 cup cubed pineapple
  • 1/3 cup of mayonnaise
  • 2 tbsp. orange juice
  • 2 tbsps. lime juice
  • 1 tbsp. honey
  • ½ tsp. ginger powder

Instructions

  1. 1Place the cubed sweet potatoes in a saucepan and cover them with water.
  2. 2Cook over medium-high heat until the sweet potatoes are just tender, then drain the water and set the potatoes aside to cool.
  3. 3Combine the diced celery, fresh chives, cubed pineapple, mayonnaise, orange juice, lime juice, honey, and ginger powder in a large mixing bowl.
  4. 4Add the cooled sweet potatoes to the bowl and toss gently to coat them in the dressing, then chill the salad in the refrigerator before serving.
