Ingredients
  

Main Ingredients
  • 2 skinless chicken breasts
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1 tbsp chipotle paste
  • 8 slices bacon
  • 10 oz cherry tomatoes halved
  • 1 avocado diced
  • 4 hard-boiled eggs chopped
  • Bag of baby spinach
  • Oil for frying
  • For the dressing:
  • 2 tbsp mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup buttermilk
  • 1 cup blue cheese crumbled

Equipment

  • Deep fryer or heavy pot
  • Platter
  • 3 bowls (for breading)

Method
 

Instructions
  1. Soak the chicken in seasoned milk for 2 hours.
  2. Mix the flour, breadcrumbs, and chipotle paste. Dredge the chicken in this mixture.
  3. Fry the bacon until crisp, then crumble.
  4. Deep fry the chicken at 375 degrees F for 5-7 minutes. Cool and chop.
  5. Arrange the spinach on a platter.
  6. Place the chicken, bacon, tomatoes, avocado, and eggs in neat rows over the spinach.
  7. Whisk the dressing ingredients together and serve on the side.
