Two slices of bread toast while butter heats in the pan for a fried egg. A slice of American cheese goes on the egg while it's still in the skillet, melting from the residual heat before the assembly starts. Three to four thin slices of deli ham layer on the bottom toast, then the egg, then the top slice. One person, ten minutes, five ingredients — a straightforward breakfast sandwich with a runny yolk that acts as a sauce.

Ingredients

  • 2 slices bread, toasted
  • 3 t. butter, softened and divided
  • 1 egg
  • 1 slice American cheese
  • salt to taste
  • 3 to 4 thin slices cooked deli ham

Instructions

  1. 1Spread each slice of toasted bread with one teaspoon of softened butter and set aside. Melt the remaining teaspoon of butter in a skillet over medium-low heat.
  2. 2Crack the egg directly into the skillet. You can break the yolk with a fork or leave it intact. Cook until the egg is mostly firm, then carefully flip it with a spatula. Sprinkle with salt, place the American cheese slice on top, and transfer the egg to a plate. Cooking on medium-low heat ensures the egg whites set gently without burning the butter.
  3. 3Place the sliced deli ham into the warm skillet and heat it through on both sides. Stack the cooked egg and melted cheese over the warm ham, then place the entire stack between the prepared toast slices.

Notes

  • Swap: Substitute cheddar, Swiss, or pepper jack if you don't have American cheese on hand.
  • Tip: If you prefer a runny yolk, skip flipping the egg and cover the skillet with a lid for a minute to steam the top.
  • Make ahead: You can fry the egg and warm the ham in advance, but assemble the sandwich just before eating so the toast doesn't get soggy.
