Ingredients
  

Main Ingredients
  • Bird: 6-10lb whole turkey
  • Flavor: 2 garlic bulbs 1 cup softened butter, salt, pepper
  • Brine: 2/3 cup sea salt 2 bay leaves, 1 tbsp allspice, cayenne, 5 garlic cloves, 4 sliced lemons

  • Large roasting pan
  • Large pot or bucket (for brining)

Method
 

Instructions
  1. Dissolve salt and spices in water. Submerge turkey and brine overnight in a cool place.
  2. Preheat oven to 475 degrees F (245 degrees C). Pat turkey dry. Stuff garlic cloves into small slits in the meat.
  3. Rub softened butter generously under and over the skin.
  4. Roast for 20 mins at high heat, then reduce to 375 degrees F (190 degrees C) and roast for about 2 hours.
  5. Rest for 30 mins to let juices redistribute before carving.
