- Dissolve salt and spices in water. Submerge turkey and brine overnight in a cool place.
- Preheat oven to 475 degrees F (245 degrees C). Pat turkey dry. Stuff garlic cloves into small slits in the meat.
- Rub softened butter generously under and over the skin.
- Roast for 20 mins at high heat, then reduce to 375 degrees F (190 degrees C) and roast for about 2 hours.
- Rest for 30 mins to let juices redistribute before carving.
