Simple grilled corn gets a massive flavor upgrade with homemade compound butter. The butter, packed with lime zest and chili powder, melts over the hot, charred corn for a smoky, spicy, and citrusy treat.

Ingredients

  • Corn: 4 corn cobs, olive oil
  • Butter: 7 tbsp unsalted butter, softened, zest of 1 lime, 1/2 tsp chili powder (or cayenne), 1/2 tsp salt, pepper

Instructions

  1. 1Mash softened butter with lime zest, chili powder, salt, and pepper.
  2. 2Roll butter into a log in parchment paper and freeze for 30 mins.
  3. 3Blanch corn cobs for 5 mins, drain, and rub with oil.
  4. 4Grill for 6 mins, turning often, until charred.
  5. 5Serve hot corn topped with a slice of the cold chili butter.
