Ingredients
  

Main Ingredients
  • Butterscotch: 4 tbsp butter 2/3 cup dark brown sugar, 2/3 cup heavy cream, vanilla
  • Batter: 1.75 cups self-rising flour 1/3 cup sugar, 1/4 cup milk, 1/4 cup oil, 1 egg, 2 bananas
  • Streusel: 1/4 cup brown sugar 1/2 cup flour, 2 tbsp butter, cinnamon

  • Muffin tin
  • Blender
  • Saucepan

Method
 

Instructions
  1. Cook butterscotch ingredients for 5 mins. Cool.
  2. Make streusel crumbs.
  3. Blend milk, oil, egg, 1 banana, and most of the butterscotch. Mix into flour. Add chopped banana.
  4. Fill muffin cups, swirl with remaining butterscotch, and top with streusel.
  5. Bake at 400 degrees F (200 degrees C) for 20 mins.
