- Cook butterscotch ingredients for 5 mins. Cool.
- Make streusel crumbs.
- Blend milk, oil, egg, 1 banana, and most of the butterscotch. Mix into flour. Add chopped banana.
- Fill muffin cups, swirl with remaining butterscotch, and top with streusel.
- Bake at 400 degrees F (200 degrees C) for 20 mins.
