Ingredients

  • 2 cups fat-free egg product or 8 eggs
  • ¼ teaspoon salt-free garlic-and-herb seasoning
  • 2 teaspoons vegetable oil
  • 4 medium green onions, sliced (¼ cup)
  • ½ cup sliced celery
  • 2 large plum (Roma) tomatoes, sliced
  • ¼ cup shredded reduced-fat sharp Cheddar cheese (2 oz)
  • 2 tablespoons cooked real bacon pieces (from 2.8-oz package)

Instructions

  1. 1Whisk the eggs and garlic-and-herb seasoning together in a medium bowl until well combined.
  2. 2Heat the vegetable oil in a 10-inch ovenproof nonstick skillet over medium heat. Add the sliced green onions and celery, cooking and stirring constantly for 1 minute so the vegetables soften without browning. Lower the heat to medium-low and pour in the beaten egg mixture.
  3. 3Cook the eggs for 6 to 9 minutes. Use a spatula to gently lift the cooked edges as they firm up, allowing the raw egg to flow underneath to the bottom of the pan. Continue until the frittata is mostly set.
  4. 4Turn on the oven broiler. Layer the sliced plum tomatoes over the frittata, then scatter the shredded cheddar cheese and bacon pieces on top.
  5. 5Place the skillet about 4 inches below the broiler for 1 to 2 minutes until the cheese melts completely. Cut into wedges and top each slice with a spoonful of sour cream.

Notes

  • Equipment: Make sure your skillet is fully ovenproof before placing it under the broiler. If the handle is plastic, wrap it tightly in aluminum foil to protect it from the heat.
  • Swap: You can use 8 whole eggs or 2 cups of fat-free liquid egg substitute depending on your preference.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or a warm oven.
