  • 1 tablespoon butter
  • 1 small onion, finely chopped (⅓ cup)

Instructions

  1. 1Whisk the eggs, basil, mint, sage, parmesan cheese, salt, and pepper together in a medium bowl until completely combined. Beating the eggs thoroughly ensures a lighter, fluffier texture. Stir the diced prosciutto into the egg mixture.
  2. 2Melt the butter in a 10-inch nonstick skillet over medium-high heat. Add the finely chopped onion and cook for 4 to 5 minutes, stirring often, until it softens and becomes crisp-tender.
  3. 3Lower the heat to medium-low and pour the egg mixture into the skillet. Cover the pan and cook for 9 to 11 minutes, or until the eggs are set around the edges and lightly browned underneath. Remove from the heat and slice into wedges.
