Ingredients

  • 2 tbsp (28 g) butter
  • 5 to 8 slices beef fillet (10 to 14 oz [280 to 392 g] total)
  • 1 tbsp (8 g) all-purpose flour
  • 1¾ cups (120 g) sliced mushrooms
  • 2 tbsp (4 g) fresh thyme leaves
  • 1 tbsp (3 g) dried thyme 1½ tsp (3 g) dried oregano
  • 2 tsp (4 g) Cajun spice blend
  • ¾ cup (180 ml) Gut-Energizing Chicken Broth
  • ¼ cup (60 ml) cream
  • ½ cup (45 g) grated Parmesan cheese
  • Salt

Instructions

  1. 1Melt the butter in a large skillet over medium-high heat. You want the pan hot enough to properly sear the meat.
  2. 2Add the beef slices once the butter begins to sizzle. Sear the meat until golden brown with dark edges, cooking for 1 to 2 minutes per side.
  3. 3Transfer the seared beef to a plate and set it aside. Reduce the heat to low and sprinkle the flour evenly into the skillet.
  4. 4Stir until the flour is fully absorbed, then mix in the sliced mushrooms, fresh thyme, dried thyme, oregano, and Cajun spice blend. Cook for 5 to 10 minutes until the herbs become highly fragrant.
  5. 5Pour in the chicken broth and increase the heat to medium. Allow the liquid to thicken for about 5 minutes, then stir in the cream, grated Parmesan cheese, and the reserved beef.
  6. 6Reduce the heat to low and simmer the sauce gently for 10 minutes. Taste and season with salt and pepper right before serving.
