Ingredients

  • 6 English muffins
  • 1½–2 tbsp wholegrain mustard
  • 6 streaky bacon rashers
  • 12 raw cocktail sausages
  • 600ml (1 pint) semi-skimmed milk
  • 4 large eggs
  • 2 tbsp chives, freshly chopped, plus extra to garnish (optional)
  • 40g (1½oz) mature Cheddar, grated
  • salt and freshly ground black pepper

Instructions

  1. 1Preheat the oven to 200°C (180°C fan) or gas mark 6. Lightly grease a 22 by 33cm rectangular baking dish.
  2. 2Slice the English muffins in half horizontally and spread the cut sides evenly with the wholegrain mustard. Cut each slice of bacon in half crosswise to create shorter strips.
  3. 3Place the prepared muffin halves cut side up in the greased baking dish. Tuck the bacon pieces and raw cocktail sausages evenly among the bread so the meat distributes perfectly.
  4. 4Whisk the milk, eggs, chopped chives, salt, and black pepper together in a large jug until completely smooth. A well-mixed custard ensures there aren't any pockets of plain egg white in the final dish. Pour this liquid mixture evenly over the muffins, then scatter the grated cheddar cheese across the top.
  5. 5Bake for 30 to 35 minutes until the sausages turn golden brown and the egg custard is completely set. A slight jiggle in the center means it needs a few more minutes. Garnish with extra fresh chives before serving hot.
