Grilled Swordfish Steaks, Sicilian Salmoriglio Style

Swordfish steaks are grilled quickly and then dressed with Salmoriglio a pungent, fragrant sauce of olive oil, lemon juice, and oregano. A classic taste of Sicily.

Ingredients

  • Salt
  • 2 tablespoons freshly squeezed lemon juice (30 ml)
  • 2 teaspoons chopped fresh oregano OR 1 teaspoon dried
  • 1/4 cup extra virgin olive oil (60 ml)
  • Black pepper, ground fresh from the mill
  • 2 pounds fresh swordfish OR other fish steaks, sliced no more than 1/2 inch thick (900 g)

Method
 

Instructions
  1. Preheat grill or broiler.
  2. Make the sauce: Put about 1 tablespoon salt in a bowl, add lemon juice, and beat until salt dissolves. Add oregano. Trickle in olive oil drop by drop while beating. Add pepper.
  3. Grill fish close to heat. About 2 minutes on one side, then turn and grill 1 1/2 to 2 minutes on the other. It doesn’t need to brown.
  4. Transfer to a warm platter. Prick each steak with a fork to let sauce penetrate.
  5. Beat the salmoriglio mixture and pour over the fish, spreading evenly. Serve at once.
