- Preheat grill or broiler.
- Make the sauce: Put about 1 tablespoon salt in a bowl, add lemon juice, and beat until salt dissolves. Add oregano. Trickle in olive oil drop by drop while beating. Add pepper.
- Grill fish close to heat. About 2 minutes on one side, then turn and grill 1 1/2 to 2 minutes on the other. It doesn't need to brown.
- Transfer to a warm platter. Prick each steak with a fork to let sauce penetrate.
- Beat the salmoriglio mixture and pour over the fish, spreading evenly. Serve at once.
