Ingredients
  

Main Ingredients
  • A 3 1/2-pound chicken, cut into 4 pieces
  • 2 tablespoons vegetable oil
  • Salt
  • Black pepper, ground fresh from the mill
  • 1/2 cup dry white wine
  • 1 ounce dried porcini mushrooms, reconstituted and chopped
  • Filtered water from mushroom soak
  • 1/4 cup canned imported Italian plum tomatoes, chopped coarse
  • 1 tablespoon butter

Method
 

Instructions
  1. Brown chicken in oil. Season.
  2. Add wine, deglaze pan.
  3. Add chopped porcini, soaking liquid, and tomatoes.
  4. Cover and simmer 50 minutes until tender.
  5. Transfer chicken to platter.
  6. Reduce sauce if needed. Swirl in butter. Pour over chicken.
