- Mix beef, panade, prosciutto, parmesan, garlic, egg yolk, salt, pepper.
- Form into a cylinder. Coat in bread crumbs.
- Brown deeply in butter/oil.
- Add wine, reduce by half.
- Add mushrooms, filtered water, tomatoes.
- Cover and simmer 1 hour.
- Slice and serve with the sauce.
