Ingredients
  

Main Ingredients
  • 1 pound ground beef
  • 2-inch slice bread soaked in milk
  • 2 tablespoons chopped prosciutto or pancetta
  • 1/3 cup grated parmesan
  • 1 egg yolk
  • 1 ounce dried porcini, reconstituted
  • 1/3 cup dry white wine
  • 2/3 cup chopped tomatoes

Method
 

Instructions
  1. Mix beef, panade, prosciutto, parmesan, garlic, egg yolk, salt, pepper.
  2. Form into a cylinder. Coat in bread crumbs.
  3. Brown deeply in butter/oil.
  4. Add wine, reduce by half.
  5. Add mushrooms, filtered water, tomatoes.
  6. Cover and simmer 1 hour.
  7. Slice and serve with the sauce.
