- Trim artichokes into wedges.
- Clean leeks, slice lengthwise and cut into 2-inch pieces.
- Simmer leeks in oil and water (covered) until tender.
- Add artichokes, salt, pepper.
- Cover and cook ~30 mins until artichokes are tender.
