Braised Artichokes and Leeks

Sweet leeks and tender artichokes braised together. A delicate and sophisticated vegetable side dish.

Main Ingredients
  • 3 large globe artichokes
  • 4 large leeks (white/pale green parts)
  • 1/4 cup extra virgin olive oil
  • Salt & Black pepper

Method
 

Instructions
  1. Trim artichokes into wedges.
  2. Clean leeks, slice lengthwise and cut into 2-inch pieces.
  3. Simmer leeks in oil and water (covered) until tender.
  4. Add artichokes, salt, pepper.
  5. Cover and cook ~30 mins until artichokes are tender.
  6. Serve.
