Sunchokes slow-cooked with tomatoes, sweet onion, and a hint of chili pepper.

Ingredients
  

Main Ingredients
  • 1 1/2 pounds sunchokes (cut into 1-inch pieces)
  • 1 cup onion (sliced very fine)
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon garlic
  • 2 tablespoons parsley
  • 2/3 cup chopped tomatoes
  • Hot red chili pepper (to taste)

Method
 

Instructions
  1. Peel and cut raw sunchokes.
  2. Sauté onion in oil until deep gold.
  3. Add garlic, parsley, tomatoes. Simmer 5 mins.
  4. Add sunchokes, salt, pepper.
  5. Cover and simmer gently 30-45 mins until tender.
  6. Serve.
