1 1/2 pounds sunchokes (cut into 1-inch pieces)
1 cup onion (sliced very fine)
1/4 cup extra virgin olive oil
1/2 teaspoon garlic
2 tablespoons parsley
2/3 cup chopped tomatoes
Hot red chili pepper (to taste)
Method
Instructions
Peel and cut raw sunchokes.
Sauté onion in oil until deep gold.
Add garlic, parsley, tomatoes. Simmer 5 mins.
Add sunchokes, salt, pepper.
Cover and simmer gently 30-45 mins until tender.
Serve.
