  • 1 pound sunchokes
  • Vegetable oil
  • Salt

Method
 

Instructions
  1. Peel sunchokes. Slice as thin as possible.
  2. Rinse in cold water to remove starch. Pat completely dry.
  3. Heat 1/4 inch oil in skillet.
  4. Fry slices in batches until russet brown on both sides.
  5. Drain on rack/paper.
  6. Salt and serve immediately.
