- Boil cauliflower 10 mins (undercook slightly). Drain.
- Cut florets into 1/2-inch slices.
- Make béchamel sauce. Mix in cheese (save 3 tbsp) and nutmeg.
- Fold cauliflower into sauce.
- Spread in buttered dish. Top with remaining cheese and butter.
- Bake at 400°F for 15-20 mins.
- Serve.
