Gratinéed Cauliflower with Béchamel Sauce

Cauliflower baked in a creamy béchamel sauce with a golden Parmesan crust.

Ingredients
  

Main Ingredients
  • 1 medium head cauliflower
  • Béchamel Sauce (2 cups milk, roux)
  • 3/4 cup grated Parmesan cheese
  • Nutmeg
  • Butter

Method
 

Instructions
  1. Boil cauliflower 10 mins (undercook slightly). Drain.
  2. Cut florets into 1/2-inch slices.
  3. Make béchamel sauce. Mix in cheese (save 3 tbsp) and nutmeg.
  4. Fold cauliflower into sauce.
  5. Spread in buttered dish. Top with remaining cheese and butter.
  6. Bake at 400°F for 15-20 mins.
  7. Serve.
