- Blanch onions 15 seconds. Drain, peel, trim roots (leave tops), cut cross in bottom.
- Put in pan with butter and 1 inch water.
- Cook 20 mins until softening.
- Add vinegar, sugar, salt, pepper.
- Simmer on low for 1+ hour until rich dark gold and tender.
- Serve with pan juices.
