Sweet and Sour Onions

Small white onions slowly simmered in butter, then finished with vinegar and sugar for a perfect sweet-sour glaze.

  • 3 pounds small white boiling onions
  • 4 tablespoons butter
  • 2 1/2 tablespoons red wine vinegar
  • 2 teaspoons sugar
  • Salt & Pepper

Method
 

Instructions
  1. Blanch onions 15 seconds. Drain, peel, trim roots (leave tops), cut cross in bottom.
  2. Put in pan with butter and 1 inch water.
  3. Cook 20 mins until softening.
  4. Add vinegar, sugar, salt, pepper.
  5. Simmer on low for 1+ hour until rich dark gold and tender.
  6. Serve with pan juices.
