- Preheat oven to 400°F.
- Slice potatoes 1/4 inch thick.
- Toss potatoes, onion, tomato, cheese, oregano, salt, pepper, and 1/2 cup water in a bowl.
- Transfer to oiled baking dish. Drizzle with remaining oil.
- Bake 1 hour until tender, turning occasionally.
- Let settle 10 mins before serving.
