Baked Potatoes, Onion, and Tomatoes (Apulian Style)

A rustic casserole of sliced potatoes, onions, and tomatoes baked with Romano cheese and oregano.

  • 2 pounds potatoes (sliced thin)
  • 2 cups onion (sliced thin)
  • 1 pound tomatoes (peeled, seeded, diced)
  • 3/4 cup grated Romano cheese
  • 1 1/2 tsp fresh oregano
  • 1/3 cup olive oil

Method
 

Instructions
  1. Preheat oven to 400°F.
  2. Slice potatoes 1/4 inch thick.
  3. Toss potatoes, onion, tomato, cheese, oregano, salt, pepper, and 1/2 cup water in a bowl.
  4. Transfer to oiled baking dish. Drizzle with remaining oil.
  5. Bake 1 hour until tender, turning occasionally.
  6. Let settle 10 mins before serving.
