Potatoes baked with a mix of fresh mushrooms and dried porcini. Earthy, elegant, and simple.

Ingredients
  

Main Ingredients
  • 1 pound small new potatoes
  • 1/2 pound fresh mushrooms
  • 1 ounce dried porcini (reconstituted)
  • 1/3 cup olive oil
  • 2 teaspoons chopped garlic
  • 2 tablespoons chopped parsley

Method
 

Instructions
  1. Cook reconstituted porcini in their liquid until dry.
  2. Slice potatoes and fresh mushrooms (1/4 inch).
  3. Mix potatoes, mushrooms (fresh & porcini), oil, garlic, parsley, pepper in baking dish.
  4. Bake at 400°F for 15 mins.
  5. Add salt, toss, bake another 15 mins until tender.
  6. Serve.
