Two cups of peeled grated Granny Smith apples and 1½ cups of grated carrots fold into a buttermilk batter spiced with apple pie spice and baking soda. Over two cups of finely chopped toasted pecans go through the batter and between the layers. Apple cider caramel sauce, made separately, replaces standard frosting between tiers and drapes over the outside. At 150 minutes total, this is a proper afternoon baking project. Serves 12.
