Ingredients

  • 2 packages (12 oz each) pork sausage links
  • 1 can (21 oz) apple pie filling with more fruit
  • 2 medium apples, peeled, chopped (about 2 cups)
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 1½ cups Original Bisquick ® mix
  • 1½ cups milk
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 6 eggs

Instructions

  1. 1Preheat the oven to 375°F. Coat a 13x9-inch glass baking dish with cooking spray.
  2. 2Place a 12-inch skillet over medium-high heat and cook the sausage for 5 to 7 minutes. Break the meat apart with a spoon as it cooks until no pink remains, then drain the excess fat so the casserole doesn't become greasy. Stir the apple pie filling and chopped fresh apples into the skillet.
  3. 3Transfer the sausage and apple mixture into the prepared baking dish, spreading it out into an even layer. Sprinkle 1 cup of the shredded cheddar cheese over the top.
  4. 4Whisk the baking mix, milk, salt, pepper, and eggs together in a large bowl until completely smooth. Pour this batter evenly over the cheese layer in the baking dish.
  5. 5Bake for 30 to 37 minutes, checking for doneness by inserting a knife into the center to see if it comes out clean. Scatter the remaining 1 cup of cheddar cheese over the casserole and return it to the oven for 3 to 5 minutes until the cheese melts. Let the dish rest for 5 minutes before slicing into squares.

Notes

  • Make ahead: Assemble the casserole completely, cover tightly, and refrigerate for 8 to 12 hours before baking. Add a few extra minutes to the baking time since you're starting with a chilled dish.
  • Storage: Keep leftover squares in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave.
