Ingredients

  • 2 ⁄ 3 cup Original Bisquick mix
  • 2 ⁄ 3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 ⁄ 2 teaspoon ground nutmeg
  • 1 ⁄ 4 cup cold butter or margarine
  • 2 cups Original Bisquick mix
  • 3 tablespoons granulated sugar
  • 2 ⁄ 3 cup milk or water
  • 1 egg
  • 2 medium cooking apples, peeled, thinly sliced (2 cups)
  • 2 tablespoons chopped nuts
  • 1 ⁄ 2 cup powdered sugar
  • 2 to 3 teaspoons milk

Instructions

  1. 1Preheat the oven to 400°F and coat a 9-inch square baking pan with cooking spray. In a small bowl, combine 2/3 cup of the baking mix with the brown sugar, cinnamon, and nutmeg.
  2. 2Cut the cold butter into the dry ingredients using a pastry blender or two knives until the mixture resembles coarse crumbs, then set it aside.
  3. 3In a medium bowl, combine 2 cups of the baking mix, granulated sugar, 2/3 cup of milk, and the egg. Beat the mixture vigorously for 30 seconds, then spread half of this batter into the prepared pan.
  4. 4Layer the thinly sliced apples over the batter and cover with half of the streusel mixture. Spread the remaining batter on top, followed by the rest of the streusel and the chopped nuts.
  5. 5Bake for about 25 minutes, or until a toothpick inserted into the center comes out clean, and let it cool for 20 minutes. Whisk the powdered sugar and 2 to 3 teaspoons of milk in a small bowl to create a thin glaze, then drizzle it over the warm cake.
  6. 6Wrap the baked coffee cake tightly and freeze for up to two months if making ahead. Thaw and warm it in the microwave or oven before serving.
