Sweet, thinly sliced apples meet a rich cinnamon streusel in this layered morning classic. Relying on a simple baking mix for both the batter and the crumb topping keeps the prep work incredibly light. You'll get a tender, cakey base that balances beautifully against the crisp, buttery streusel and a quick powdered sugar glaze. It's exactly what you want alongside a hot cup of coffee on a lazy Sunday morning.

Ingredients
2 ⁄ 3 cup Original Bisquick mix
2 ⁄ 3 cup packed brown sugar
1 teaspoon ground cinnamon
1 ⁄ 2 teaspoon ground nutmeg
1 ⁄ 4 cup cold butter or margarine
2 cups Original Bisquick mix
3 tablespoons granulated sugar
2 ⁄ 3 cup milk or water
1 egg
2 medium cooking apples, peeled, thinly sliced (2 cups)
2 tablespoons chopped nuts
1 ⁄ 2 cup powdered sugar
2 to 3 teaspoons milk
Instructions
1Preheat the oven to 400°F and coat a 9-inch square baking pan with cooking spray. In a small bowl, combine 2/3 cup of the baking mix with the brown sugar, cinnamon, and nutmeg.
2Cut the cold butter into the dry ingredients using a pastry blender or two knives until the mixture resembles coarse crumbs, then set it aside. Cold butter is essential here so the streusel bakes up crisp instead of melting into the cake.
3In a medium bowl, combine 2 cups of the baking mix, granulated sugar, 2/3 cup of milk, and the egg. Beat the mixture vigorously for 30 seconds, then spread half of this batter into the prepared pan.
4Layer the thinly sliced apples evenly over the batter, then cover with half of the streusel mixture. Spread the remaining batter on top, followed by the rest of the streusel and the chopped nuts.
5Bake for about 25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 20 minutes.
6Whisk the powdered sugar and 2 to 3 teaspoons of milk in a small bowl to create a thin glaze. Drizzle it evenly over the warm cake.
Notes
Make ahead: Wrap the baked and cooled coffee cake tightly and freeze for up to 2 months.
Reheat: Thaw frozen cake overnight, then warm gently in the microwave or a low oven before serving.
Tip: Slice the apples as thinly as possible so they soften completely during the short baking time.
