Bacon and Cheese Flatbreads

Bacon and Cheese Flatbreads

These quick flatbreads combine crispy smoked bacon and melted Red Leicester cheese for a satisfying morning meal. The recipe uses folded flatbreads toasted right in the skillet, creating a warm, crunchy exterior that contrasts perfectly with the gooey cheese inside. It is an excellent choice for a fast weekday breakfast or a relaxed weekend brunch. Serve them hot straight from the pan for the best texture.

Ingredients

  • 8 smoked bacon medallions
  • 4 slices (100g) Red Leicester cheese
  • 4 small, folded flatbreads

Instructions

  1. 1Coat a large frying pan with spray oil and place it over medium heat. Cook the smoked bacon medallions for 3 to 4 minutes per side until they are fully cooked.
  2. 2Take the bacon out of the pan and set it aside. Wipe the inside of the pan clean using a paper towel.
  3. 3Tuck the cooked bacon and slices of Red Leicester cheese inside the folded flatbreads. Return the assembled flatbreads to the pan and toast them for 1 to 2 minutes on each side until the bread turns crispy and the cheese melts completely.
