Ingredients

  • 1½ pounds ground lamb
  • 4 ounces feta cheese, crumbled
  • 2 teaspoons smoked sea salt, store-bought or homemade ( here ), or fine sea salt

Instructions

  1. 1Preheat the oven to 350°F.
  2. 2Combine the ground lamb, crumbled feta cheese, and smoked sea salt in a large bowl. Mix thoroughly with your hands, then shape the mixture into eight patties about two and a half inches in diameter. Arrange the shaped patties on a rimmed baking sheet.
  3. 3Bake the patties for 10 to 12 minutes until they are completely cooked through.
  4. 4Remove the baking sheet from the oven and let the patties rest briefly. Serve immediately, or let them cool completely before transferring to an airtight container for storage.
