Ingredients

  • 2 cups plain whole-milk Greek yogurt
  • 2 tablespoons plus 1 teaspoon honey, divided
  • 1 teaspoon vanilla extract or ¼ teaspoon almond extract
  • 1 lemon
  • ½ cup crumbled whole-grain crackers and/or breakfast cereal
  • ¼ cup chopped walnuts or other nuts
  • ½ cup frozen or fresh fruit, such as chopped peaches or strawberries, or whole blueberries

Instructions

  1. 1Line a large rimmed baking sheet with parchment paper.
  2. 2Make sure there is enough flat space in your freezer to hold the baking sheet level.
  3. 3Whisk the yogurt, two tablespoons of honey, and the vanilla extract together in a large mixing bowl.
  4. 4Pour the yogurt mixture onto the lined baking sheet and spread it out to an even thickness of about one-eighth of an inch.
  5. 5Grate the lemon zest evenly over the surface of the yogurt layer.
  6. 6Drizzle the remaining teaspoon of honey across the top of the yogurt.
  7. 7Drag a spatula through the yogurt a few times to swirl the honey and lemon zest into the base.
  8. 8Scatter the crushed crackers, chopped walnuts, and fruit evenly over the swirled yogurt.
  9. 9Freeze for two to three hours until completely firm, then peel away the parchment paper and break the sheet into pieces to serve.
