Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup walnuts or pecans (4 ounces), chopped
  • ½ cup red candied cherries, halved
  • ½ cup pitted dates, finely chopped
  • ½ cup semisweet chocolate chips
  • 4 tablespoons butter or margarine, softened
  • 1 cup sugar
  • 3 large eggs

Instructions

  1. 1Warm the oven to 325 degrees F. Coat a 9x5-inch metal loaf pan with grease and a dusting of flour. Whisk the flour, baking powder, and salt together in a medium bowl. Toss the walnuts, candied cherries, dates, and chocolate chips in a separate small bowl.
  2. 2Beat the softened butter and sugar in a large bowl using a mixer on low speed. Continue mixing for about 2 minutes until the mixture resembles wet sand.
  3. 3Mix the eggs into the butter mixture one at a time, beating thoroughly after each one. Gently mix in the dry flour ingredients just until combined, then fold in the bowl of nuts, fruit, and chocolate chips.
  4. 4Pour the batter into the prepared loaf pan and spread it into an even layer. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  5. 5Let the bread rest in the pan on a wire rack for 10 minutes. Turn the loaf out of the pan and leave it on the rack to cool completely.
