  • 8 LARGE SPRIGS FRESH MINT
  • ½ cup SUGAR
  • ¼ cup FRESH LIME JUICE
  • 1½ teaspoons FRESHLY GRATED LIME PEEL
  • 4 cups ICE CUBES
  • 1 cup GOLDEN RUM
  • 3 cups CLUB SODA, CHILLED

Instructions

  1. 1Strip the leaves from the fresh mint sprigs and place them into a blender. Add the sugar, fresh lime juice, and grated lime peel. Pulse the mixture briefly until the mint is finely chopped and the sugar begins to dissolve. Blending instead of muddling extracts the mint oils more evenly.
  2. 2Fill a large pitcher with ice cubes and pour in the blended mint mixture. Stir in the golden rum to combine the flavors. Top the pitcher with chilled club soda. Divide the cocktail among six glasses and garnish each with an extra sprig of mint.

Notes

  • Make ahead: You can blend the mint, sugar, and lime juice up to a few hours in advance. Keep it chilled in the fridge until you're ready to add the rum and club soda.
