Frozen mango and half a frozen banana give this single-serving smoothie a thick, cold base that blends in under five minutes. A full cup each of kale and baby spinach go in along with hemp protein powder, almond butter, a piece of fresh or frozen coconut, and a tablespoon of lion's mane mushroom blend powder. Oat milk keeps it plant-based without thinning the texture too much. The coconut and almond butter carry enough fat to round out the earthy green flavor.

Ingredients

  • 1 piece fresh or frozen coconut (about 1½ ounces / 45 g)
  • ½ frozen banana
  • 1 cup (65 g) chopped kale leaves (no stems)
  • 1 cup (45 g) baby spinach
  • 1 cup (240 ml) unsweetened oat milk or other plant milk
  • ½ cup (85 g) frozen mango pieces
  • 1½ tablespoons hemp protein powder
  • 1 tablespoon almond butter
  • 1 tablespoon mushroom blend powder (one that includes lion’s mane)
  • 1 tablespoon Brain On powder (optional)

Instructions

  1. 1Place the coconut, frozen banana, kale, spinach, oat milk, frozen mango, hemp protein, almond butter, mushroom powder, and Brain On powder into a blender.
  2. 2Blend on high speed until the mixture is thick, creamy, and bright green. A high-powered blender works best here to completely pulverize the raw kale. Pour into a glass and drink right away while it's still frosty.

Notes

  • Ingredient tip: Brain On powder is usually available at local health food stores or online, but you can skip it if you prefer.
  • Swap: If you don't have oat milk, any unsweetened plant milk works well.
  • Make ahead: Chop and freeze your kale and spinach in advance for an even colder, thicker smoothie.
