Celery stalks braised in broth with pancetta and onion, then gratinéed with Parmesan.

Ingredients
  

Main Ingredients
  • 2 large bunches celery (stalks only)
  • 3 tablespoons chopped onion
  • 1/4 cup chopped pancetta
  • 2 cups meat broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter

Method
 

Instructions
  1. Peel and cut celery stalks (3 inches). Blanch 1 min.
  2. Sauté onion and pancetta in butter.
  3. Add celery, salt, pepper. Cook 5 mins.
  4. Add broth. Cover and simmer until tender.
  5. Uncover and boil away liquid.
  6. Transfer celery to baking dish. Spoon onion/pancetta over. Top with Parmesan.
  7. Bake at 400°F until cheese melts.
  8. Serve.
