- Peel and cut celery stalks (3 inches). Blanch 1 min.
- Sauté onion and pancetta in butter.
- Add celery, salt, pepper. Cook 5 mins.
- Add broth. Cover and simmer until tender.
- Uncover and boil away liquid.
- Transfer celery to baking dish. Spoon onion/pancetta over. Top with Parmesan.
- Bake at 400°F until cheese melts.
- Serve.
