Carrots braised in butter and water until wrinkled and concentrated in flavor, finished with Parmesan.

- Slice carrots into 3/8 inch disks.
- Place in pan with butter and water 1/4 inch up sides.
- Cook uncovered. When water evaporates, add salt, sugar.
- Continue adding small amounts of water for 1-1.5 hours.
- Stop adding water when carrots are browned and wrinkled.
- Toss with Parmesan and serve.
