Braised Carrots with Parmesan Cheese

Carrots braised in butter and water until wrinkled and concentrated in flavor, finished with Parmesan.

Ingredients
  

Main Ingredients
  • 1 1/2 pounds carrots
  • 4 tablespoons butter
  • 1/4 teaspoon sugar
  • 3 tablespoons grated Parmesan cheese
  • Salt

Method
 

Instructions
  1. Slice carrots into 3/8 inch disks.
  2. Place in pan with butter and water 1/4 inch up sides.
  3. Cook uncovered. When water evaporates, add salt, sugar.
  4. Continue adding small amounts of water for 1-1.5 hours.
  5. Stop adding water when carrots are browned and wrinkled.
  6. Toss with Parmesan and serve.
