A delicate braise of thinly sliced sunchokes and sweet scallions. A harmonious pairing.

Ingredients
  

Main Ingredients
  • 1 pound sunchokes (sliced very thin)
  • 8 bunches scallions (cut into pieces)
  • 3 tablespoons butter
  • Salt & Black pepper

Method
 

Instructions
  1. Peel and slice sunchokes.
  2. Clean scallions, cut into pieces (split bulbs if thick).
  3. Cook scallions in butter and 1/2 cup water until water evaporates.
  4. Add sunchokes, salt, pepper, and another 1/2 cup water.
  5. Simmer until water evaporates and vegetables are tender (approx 20 mins).
  6. Serve.
