- Peel and slice sunchokes.
- Clean scallions, cut into pieces (split bulbs if thick).
- Cook scallions in butter and 1/2 cup water until water evaporates.
- Add sunchokes, salt, pepper, and another 1/2 cup water.
- Simmer until water evaporates and vegetables are tender (approx 20 mins).
- Serve.
